Apple Rice Curry

  • 1 cup apple cider
  • 1 cup water
  • 1 cup rice
  • ½ tsp salt
  • ¼ cup butter
  • ¼ cup minced onion
  • ¼ cup chopped celery
  • ¼ tsp nutmeg
  • ¼ tsp curry powder
  • 1 apple peeled, cored and cubed
  • ¼ cup slivered almonds or walnuts
  • ¼ cup raisins

Combine cider, water, rice and salt in a saucepan with a lid. Cook rice according to package directions.

Meanwhile, melt butter in small skillet. Saute onion and celery until tender. Add spices, apples, almonds or walnuts and rice. Cook until apples are tender. Mix the two together.

If you leave out the raisins, you can add chopped chicken.
